I swear I always gain weight on the boat. I blame it on eating a little more to keep from being seasick, but hey truth is, I just don’t do my normal exercise routine when I’m on the boat, and a few glasses of wine don’t help either.
We left on Friday (July 15th and just got back (18th)), we’ve been eating salad for lunch the whole time.
Who knew you could find anything healthy at McDonalds, but I found this Salad there and modified it.
Serves 2 large portions
2 apples (I like fuji) chopped.
blueberries (optional, I use them in season)
cherry yoplait yogurt (you can try other flavors too) I use one yogurt per salad.
Roasted salted nuts chopped
I use a big handful of nuts per salad too, because I really love nuts.
Put the nuts on right before you serve the salad.
This really is a great salad. The grapes and the blueberries pop in your mouth and the crispness of the apple, the salt and crunch of the nuts. Try it. You’ll like it.
Now that my foot has healed it’s time to start running again. We caught 11 White Sea Bass and one Yellow Tail.
